Eat By Design Recipe: BBQ Ribs With Peach Sauce

Peaches are in season and are one of my favorite summer fruits… I also love homemade BBQ ribs in the summer… (especially when we’re having friends over.) it’s such an easy meal and it doesn’t require too much prep, just a tiny bit of organization and timing.

Tools
  • Large roasting pan
  • Aluminium foil paper
  • Large pot
  • Blender
Ingredients
  • 2-3 racks of pork ribs
  • 2-3 celery stalks
  • 2-3 carrots
  • 2 onions1-2 bay leaves
  • Stock or water – enough to cover the meat
  • Sea salt & pepper
Peach Sauce
  • 4 peaches, peeled, cored and diced
  • 1 medium onion, diced
  • 2 garlic cloves, chopped
  • 5.5 oz of tomato paste (1 small can)
  • 1 cup of water
  • ½ cup + 1 tbsp of apple cider vinegar
  • 2 tbsp of molasses
  • 1 tbsp of maple syrup
  • 3 tsp of smoked paprika
  • ¼ tsp of chipotle powder
  • Sea salt & pepper (to taste) – I put 1 tsp of black pepper and ½ tbsp. of sea salt

1. Chop the celery stalks, carrots, and onions in large pieces and put in the bottom of a roasting pan.

2. Sprinkle salt and pepper on each side of the ribs, and put the ribs in the roasting pan on top of the vegetables. You can remove the white membrane from the back of the ribs. It should be able to come off with just a spoon. If it doesn’t come off easily, you can use a sharp knife and score between each bone, then remove the membrane by pieces.

3. Fill the roasting pan with stock (you can use chicken stock or vegetable stock or water), until everything is covered with liquid, and add the bay leaves.

4. Cover the roasting pan with aluminium foil paper (this seals the pan more efficiently, to allow a better cooking), and put in the oven at 250˚F for 6 hours.

5. Leave the ribs in the broth, and cool completely (overnight is ideal). Remove the ribs from the broth once completely cooled, and cover the ribs with the Peach BBQ Sauce. Leave to marinate for 15 minutes, then reheat and grill on the BBQ or in the oven, until the ribs are hot (~20 min).

6. Dice the onion and the garlic, and cook in a large pot over medium heat until the onions are cooked.

7. Peel, core and dice the peaches, and add them to the pot. Give it a good stir.

8. Add in the rest of the ingredients, and stir well.

9. Bring the heat to medium-high and boil for 15 minutes, or until the sauce has become thicker, while constantly stirring to keep the sauce from sticking to the pot.

10. Remove the sauce from heat, and pour in a blender (*be extremely careful, as the sauce will be super hot!).

11. Blend on high speed until the sauce has a smooth texture.

12. Spread on ribs, marinate your chicken, or use as a BBQ sauce for your burgers.
Yields 4 cups of BBQ sauce. Will keep in an airtight container in the fridge for 1 week.

MORE TIPS…

  • You can also cook your ribs in a crock pot on low temperature for 6-8 hours.
  • Not a fan of peaches? You can replace the peaches with plums, or keep it simple and not add any fruits. You might want to double the recipe if you don’t put fruits, because the fruits help to get a bigger quantity, and rectify the seasoning of sugar and acidity (vinegar).
  • Freeze your BBQ sauce for your next meal! It will keep longer in the freezer, and you’ll still be able to enjoy it. All you have to do is reheat it.

The Anatomy Of BBQ Sauce

A BBQ sauce has 5 basics ingredients : tomatoes, water, vinegar, sugar and spices. Making your own BBQ sauce is about finding the right balance between sweet (sugar) and sour (vinegar). A true BBQ sauce calls for ketchup as your base. I personally don’t like premade ketchup, so I usually make my own. Then, to the ‘ketchup’, you basically add your spices, and you have a BBQ sauce!

Customize your BBQ Sauce!

Here are the main key ingredients to create the perfect combination :

  • Tomatoes: tomato paste, homemade ketchup, or tomato sauce
  • Vinegar: apple cider vinegar or white wine vinegar
  • Water: you can replace water with juice, but don’t forget to adjust the sugar quantity
  • Sugar: maple syrup, honey, molasses, or brown sugar
  • Spices: paprika (smoked or plain), chipotle powder, cayenne pepper, mustard
  • Flavours: fruits, liquor (bourbon, whiskey), or anything you want, really
