Ingredients
- 4 cloves of garlic
- 1 inch of ginger root
- 2 pork tenderloins
- ½ cup of olive oil
- ⅓ cup of maple syrup
- ¼ cup of Tamari sauce (gluten-free soy sauce)
- Salt & pepper
- 7-15 stripes of bacon (optional)
1. Cut garlic and ginger in very small pieces.* Put garlic and ginger in a large container.
2. Add olive oil, maple syrup, Tamari sauce and salt and pepper to the ginger and garlic. Stir well, and put aside.
3. Place pork tenderloin horizontally on a cutting board, and cut in large pieces (about 2 inches wide).
4. Put the pieces of pork in a large Ziploc bag.
5. Add the marinade to the pork in the plastic bag. Marinate the meat for at least 1 hour. Remove pork pieces from marinade before cooking.
6. For extra goodness and flavour, wrap each pork pieces with a stripe of bacon (you can use half a stripe or the whole stripe) before cooking it. You can hold the bacon to the pork with toothpicks.
7. Cook on the BBQ on medium heat until the meat is thoroughly cooked, or in the oven at 350˚F for 25-30 minutes, until the meat is thoroughly cooked.
8. Serve the with your favourite vegetables.

Time Saver Tips
- *To save time, pulse ginger root and garlic cloves in a food processor until it is all reduced to small pieces.
- Double the recipe, and divide in 2 Ziploc bags. Freeze 1 bag, so the meat can marinate longer, and be ready to cook whenever you want.
- Marinate the pork the night before for extra tenderness and flavour!
