Every year I get excited when the weather warms up because it means that I can go to the farmer’s market for fresh produce!

Cooking with seasonal fruits and vegetables is the ultimate goal for me… First, because I just love to try new recipes, and second I know that the produce is as fresh as it can be (which means it has more nutrients!)

I also love shopping local and supporting the farmers in my area.

Unlike what most people think, cooking with the seasons is not hard, nor time consuming… especially when you’ve got the “Cooking With The Seasons” Recipe Series I’m going to share with you over the upcoming weeks.

  • Salad bowl
  • Mandolin
  • Zester

Ingredients

  • 1 bunch of asparagus (about 2 cups), cooked and cut in small pieces
  • ¼ of a fennel (bulb only), shaved
  • 4 cups of arugula (4 handful)
  • ½ cup of dill, roughly chopped
  • 4 tablespoons of ricotta or goat cheese (optional), divided

Dressing

  • ¼ cup of olive oil
  • Juice + zest of 1 lemon
  • 1 tablespoon of honey (add more to taste if the dressing is too acid)
  • salt & pepper to taste

1. Cut asparagus in small pieces, and steam for not more than 2 minutes. Rinse in cold water to stop it from overcooking.
2. Cut the fennel in four. Cut off the bottom part. Using a mandolin, shave the fennel vertically (along the thinner edge).

3. Cut the dill roughly.
4. Combine the asparagus, fennel, arugula and dill together in a salad bow
5. Whisk the olive oil with the zest and the juice of a lemon. Add the honey and stir well.
6. Add the dressing to the salad, stir and serve.

7. Add 1 tablespoon of ricotta or goat cheese to each serving of asparagus salad for extra flavour. (*optional)

Serves 4

You can serve this salad as a side, appetizer or as a main.
