- Large roasting pan
- Aluminium foil paper
- Large pot

- 2-3 racks of pork ribs
- 2-3 celery stalks
- 2-3 carrots
- 2 onions1-2 bay leaves
- Stock or water – enough to cover the meat
- Sea salt & pepper
- 4 peaches, peeled, cored and diced
- 1 medium onion, diced
- 2 garlic cloves, chopped
- 5.5 oz of tomato paste (1 small can)
- 1 cup of water
- ½ cup + 1 tbsp of apple cider vinegar
- 2 tbsp of molasses
- 1 tbsp of maple syrup
- 3 tsp of smoked paprika
- ¼ tsp of chipotle powder
- Sea salt & pepper (to taste) – I put 1 tsp of black pepper and ½ tbsp. of sea salt
BBQ Ribs
1. Chop the celery stalks, carrots, and onions in large pieces and put in the bottom of a roasting pan.
2. Sprinkle salt and pepper on each side of the ribs, and put the ribs in the roasting pan on top of the vegetables. You can remove the white membrane from the back of the ribs. It should be able to come off with just a spoon. If it doesn’t come off easily, you can use a sharp knife and score between each bone, then remove the membrane by pieces.

6. Dice the onion and the garlic, and cook in a large pot over medium heat until the onions are cooked.

- You can also cook your ribs in a crock pot on low temperature for 6-8 hours.
- Not a fan of peaches? You can replace the peaches with plums, or keep it simple and not add any fruits. You might want to double the recipe if you don’t put fruits, because the fruits help to get a bigger quantity, and rectify the seasoning of sugar and acidity (vinegar).

A true BBQ sauce calls for ketchup as your base. I personally don’t like premade ketchup, so I usually make my own. Then, to the ‘ketchup’, you basically add your spices, and you have a BBQ sauce!
