Skewers (wooden or steel)
Ingredients
2 lbs of beef, cubed (you can use stewing beef, or top sirloin)
¼ cup grain mustard
2 tbsp Dijon mustard
2 tbsp apple cider vinegar
1 tbsp honey
1 tbsp tamari sauce
2 tsp paprika
4 cloves of garlic, finely chopped
Fresh rosemary leaves (about 1 tbsp), finely chopped
¼ tsp sea salt
½ tsp ground black pepper
1. In a small bowl, mix all the ingredients for the marinade together.
2. Add the marinade to the beef cubes, and cover the meat with the marinade.
3. Marinate at least 4 hours, or overnight for best results.
4. Take the marinated beef cubes out, and let sit at room temperature for 20 minutes before putting them on skewers.
5. Cook the skewers on the BBQ on medium heat, leaving each side of the cubes on the grill for 4-6 minutes, or until the meat is golden brown, and slightly charred. Cook the skewers according to your preferences. You can also brush the rest of the marinade on the beef while cooking on the BBQ.
6. Leave the skewers to cool down for 5-7 minutes before eating them. It will make the meat juicier and tender.
Yields 4 skewers.
More Tips
- For best results, I suggest cooking your vegetables and meat on different skewers. The vegetables are likely going to take less time to cook, so less chance to burn or overcook.
- Soak your skewers in water ahead of time (if you’re using wooden ones), so they don’t dry and catch on fire on the BBQ.
- Double the recipe, and freeze half of the beef cubes with the marinade in a freezer bag, for a fast dinner next time you want to eat beef skewers.
